Tasting Notes

Valpolicella Ripasso is obtained through a second fermentation of Valpolicella wine in contact with the residual lees of Amarone. This process lasts 15 to 20 days and is followed by a 24 months aging in French oak.

Compared to Valpolicella, it is more structured and has more longevity, the alcohol content is higher, the acidity lower, the roundness more marked and the values of the phenolic substances and extracts are higher. Valpolicella Ripasso offers a slightly ethereal perfume of red fruits and black cherry. The palate is fine, harmonious, dry and velvety.

Producer

It was 1974 when the visionary Guido Fidora decided to convert his estate into organic. It was the time when chemicals were all the rage and considered innovative and indispensable to a modern farmer. His love for nature made him realise that a clean approach meant better quality of grapes, and so going against the tide he created an oasis of biodiversity. His grandson Emilio, now at the helm of the estate, continued Guido’s legacy and converted the farm to biodynamic. Their respect for the land, environment and tradition shows in their wines that are pure and genuine, and a perfect example of traditional Valpolicella.
