Chablis
A complex yet subtle white, with notes of minerally sea salt & even a hint of herbal tea. Amazing freshness & purity. Attractively pale gold in colour. A most distinctive Chablis packed with lots of citrus, green apple and pear flavours which linger in the mouth.
Lightly chilled it makes the perfect accompaniment to seafood of any kind as well as white meat dishes. Also an excellent appetiser.
Soil - Clay and limestone.
Location - The Beauroy vineyard is situated on the steep chalky hills to the north of the village on the south side of the River Serein.
Vineyards - 20 to 40 years old – 10 000 vines per hectare – Yield of 45 HL per hectare.
Vinification - Low temperature alcoholic fermentation and malolactic fermentation in stainless steel tanks. Bottling after 11/12 months.
Ageing - 10 months ageing in oak vats for part of the wine.
