Domaine Michel Bailly Puilly Fume "Les Vallons" 2007

Deep yellow colour, almost honey; grassy notes on nose but full and round; grassy note on the palate; round mouthfeel; floral notes, minerals, citrus notes, and iodine on a prominent finish. Overall, the wine was lean and crisp.

Domaine Michel Bailly is located on the limestone slopes overlooking the lazy Loire River in one of the appellation's best sites, "Les Loges."  The estate is run by father and son team, Michel and David Bailly.  David studied winemaking in both France and South Africa, and has introduced terraced vineyard planting practices to the estate.  This domaine organically farms their vineyards and winemaking follows a traditional path with fermentation in temperature-controlled stainless steel used to preserve the fruit's liveliness and unique expression of Sauvignon Blanc.
