This is a wine crafted with structure, concentration, and longevity in mind. Clean ripe fruit was harvested and vinified using traditional techniques of foot stooping, skin contact and native yeast. The resulting wine has intense peach aromas, a richly textured and structured palate with a minerality derived from the clay soils and is complimented by crisp clean acidity.

The Vineyard

The Waipara Springs Estate Vineyard from which Premo wines are solely sourced has a terroir that renders wines totally unique. Derived from a prehistoric lakebed at the centre of the Waipara Valley floor the vineyard soils are a rich blend of clay and limestone. With vines sheltered from the prevailing easterly winds by the Teviotdale range, high midsummer heat combined with relatively low rainfall during the growing season along with long warm days and cold nights during harvest provide near perfect conditions for high quality fruit.

After evaluation of each block, labour intensive canopy manipulation is carried in accordance to the style of wine each parcel contributes to the overall blend.

Covering an area of 26 hectares, the Waipara Springs Estate Vineyard contains some of the oldest own rooted Mendoza clone Chardonnay in New Zealand, a mixture of Pinot noir clones predominantly 10/5 and mass selections of Riesling and Sauvignon blanc.
