Tasting Notes
The first nose, gushes from the label... pepper, black fruit and ripe crushed thyme, fennel, toasted pinion. A musky smell a little reminder ... "Wild Flavors". Finally to the palate what a surprise! The attack is soft and fleshy. It is not heavy, the tannins are still young but full of promise. Dark chocolate, mocha and graphite empyreumatic aromas and spices involved in sensual pleasures. Decant largely to open this wine even more promising and beautifully unconventional. Finally, a boar and a rabbit... just have fun and enjoy ! It can be easily forgotten 5-7 years under good conditions of ageing.

One of our favourites. We have been working with brothers Nicolas and Arnaud Bergasse for many years.
In the heart of Languedoc, in Saint-Chinian. Here, in the south of France, on limestone terraced hills, the vines share the land and sun with the garrigue and olive trees. Their family vineyard consists of 98 acres on which we use a system of sustainable agriculture in order to preserve the lasting quality of its soils.
In fact, the property has been in their family for nearly five centuries (since 1551), passed down from generation to generation. In the grounds of our property we’ve found the remains of a Gallo-Roman villa. The house itself dates from 1911, and is decorated with a Bacchic fresco, showing that the family has always had a tradition of wine-making and festivity.
Vinification
Hand picked. Total disteming. Traditional vinifications with long macerations. Extraction by « rack and return » technic only. Matured in our cellars in stainless steel and concrete tanks.
