The robe is attractive with a deep cherry red. The nose is complex, elegant and offers soft aromas of spices and pepper, blended with hints of coffee and cocoa. The palate is supple and elegant, and lifted by pleasantly lingering woody notes. The red fruit flavours assail the palate while keeping very silky tannins. The liquorice final reveals a good length

Food pairings : It matches perfectly stews and casseroles, lamb chops with herbs and cheese.
The Vineyard
The Mas Olivier dominates the Faugères appellation because of its geographical situation and also its reputation. The Mas Olivier blend was born in the 90’s under the Faugères AOC label and it rapidly became the iconic product of our winery. It is one of the most well-known wine in the Languedoc Roussillon area.

The qualitative method of carbonic maceration is used on the Carignan and Syrah varietals to extract intense fruit notes and a good structure. The vinification is followed by a long fermentation period for the Grenache. Then, the wine is aged for 6 to 8 months in French oak barrels.

Faugères is part of the 5 Languedoc CRUS since the beginning of the year. Faugères is the only AOP in Languedoc over a homogeneous territory made of Schists (‘slay stones for over 90%) which contribute to the tense and fresh personality of our Faugères wines.

The protected landscape, composed of ridges rising to 400m, is very favourable for the implantation of quality vineyards. Schist allows the roots to penetrate deeper which increase the trade with minerals. It promotes the fine aromas and complexity to the wines. This is why the AOC Faugères communicates around the label ‘Faugères : l’appellation Nature de Shistes’
